Serves: 4 Ingredients  4 x 200g skinless blue-eye fillets 5cm piece ginger, thinly sliced 1/4 cup (60ml) Chinese rice wine (shaohsing) 2 tablespoons light soy sauce 1 teaspoon caster sugar 1/2 teaspoon sesame oil 2 Chillies  4 spring onions, thinly sliced Method 1.Coat the plate with sesame oil. Place the fish fillets on a plate and sit in a steamer.
